Summer is my favourite time of year because the weather is hot (most of the time!) and it is time for summer parties and picnics.
I also love that in summer, berries taste absolutely amazing because is there anything better than a bowl of fresh summer berries?
Actually, yes there is, all the summer berries on top of no-bake cheesecake.
Fresh, sweet and creamy is what springs to mind and add a glass of prosecco or champagne to sweeten the deal.
So let’s make Mini Summer Berry Cheesecakes.
INGREDIENTS
Cheesecake Mixture
60g Digestive Biscuits (4 biscuits)
60g Salted Butter
300ml Double Cream
280g Full-Fat Cream Cheese
60g Icing Sugar
Garnish
Strawberries
Raspberries
Blueberries
Blackberries
EQUIPMENT
Prep Time: 10 mins
Cook / Freeze Time: Chill for a minimum of 4 hours
Servings: 4 mini cheesecakes
STEP 1
Add the Digestive Biscuits into the food processor and blitz until the biscuits are finely crumbled.
Melt 60g of butter in the microwave or stovetop.
Remove the crumbled digestives from the food processor and add to a bowl with the melted butter and stir.
STEP 2
Spoon the digestive butter mix evenly into each ramekin ensuring the bottom of each ramekin is completely covered.
Set the ramekins aside.
STEP 3
Add the Cream Cheese and Icing Sugar to a mixing bowl then blend for a minute with a handheld mixer.
STEP 4
Add cold Double Cream to another mixing bowl and use the hand blender to whip the cream until firm.
TIP – Scoop some of the double cream on to a spoon after blending and if it holds firm to the spoon when you turn it upside down then the mixture has reached the right consistency.
STEP 5
Add the cream cheese/icing mixture to the double cream mixture and fold together with a spatula until combined.
STEP 7
Get a piping bag and use the spatula to add the mixture into the bag.
Pipe the mixture to the top of each ramekin.
Use a palette knife to level off the mixture in each ramekin so that you have a flat surface to add the summer berries.
STEP 8
Place the ramekins in the fridge for 4 hours minimum so they can set.
STEP 9
Remove the ramekins from the fridge and add Strawberries, Raspberries, Blueberries and Blackberries.
Serve and enjoy!
STORAGE
Store in the fridge in an air tight container and consume within 2 days.
ALTERNATIVE INGREDIENTS
Instead of salted butter you can opt for unsalted instead.
Always ensure your double cream is COLD so it can be whipped into a firm texture.
