In my humble opinion, combinations don’t get much better than mango and habanero chillies smothered over chicken wings.

I would happily debate with anyone that fruity and spicy flavours thrown together bring out the best in food, and when chicken wings are thrown into the mix, you won’t find me debating at all because I will be too busy eating.

But in all honesty, chicken wings really are one of the GOAT party food choices because:

  1. They can be flavoured virtually any way.
  2. They are cheap to buy.
  3. They can be baked, fried or air-fried (which this recipe uses).

So, for me that is three BIG yes’s to put chicken wings at the top of my party food ideas list.

Let’s make them!

Sweet & Spicy Party Wings

Ingredients & Equipment:

Wings
14 Chicken Wings
1 Level tbsp of Aluminium-free Baking Powder
1 tsp Salt
1 tsp Pepper
Cooking Spray

Mango Habanero Sauce
1 Ripe Mango
200ml Mango Nectar
1 Habanero Chilli
30ml Honey
30ml Apple Cider Vinegar
30g Unsalted Butter

EQUIPMENT

Prep Time: 10
Cook / Freeze Time: 20
Servings: 14

Steps:

Wing Prep

STEP 1

If the chicken wings are whole, then split them into drums and flats by chopping through the joint of the wing.

STEP 2

Place the wing pieces into a large mixing bowl, then add:

1 level tbsp of aluminium-free baking powder

1 tsp of salt

1 tsp of pepper

Then, toss until the wings are entirely seasoned.

STEP 3

Preheat the air-fryer to 200c for 2 minutes.

When the air fryer has finished preheating, lightly spray the basket with cooking spray.

*Add the wings to the basket, leaving space between each piece to ensure the air adequately circulates and cook for 15 minutes at 200c.

Turn the chicken wings halfway through.

*Depending on the size of your air fryer, you might have to cook the chicken in batches.

GOOD TO KNOW – The internal temperature of chicken should be 74c or above before eating. Check your wings with a thermometer to ensure they are cooked through.

Mango Habanero Sauce

STEP 1

Slice the ripened mango into slices, then remove the skin before adding to the blender.

STEP 2

Remove the stem and shoulders of the habanero and add to the blender.

If you want less heat, remove the seeds beforehand.

STEP 3

Also add to the blender:

200ml Mango Nectar
30ml Honey
30ml Apple Cider Vinegar

Blitz the ingredients until a smooth consistency is achieved.

STEP 4

Heat a saucepan on a medium heat and add 30ml of unsalted butter.

Once the butter has melted, add the ingredients from the blender and stir.

Let the sauce simmer for a 4-5 minutes and occasionally stir.

STEP 5

When the chicken wings have been cooked place them in a dish and cover with the mango habanero sauce.

Serve with Ranch or Blue Cheese dip.

Notes:

TOP TIPS

Sugar counteracts spice, so if these wings are too hot to handle, add some more honey to bring down the heat!

If you can’t get your hands on Habanero Peppers, use Scotch Bonnet chillies instead.

Ensure you use mango flesh as it helps thicken the sauce.
